Don’t Toss The Stem
Shiitake has a woody stem that isn’t nice to eat. To prep your mushrooms for cooking, remove the whole thing. But don’t throw away all that flavor; keep the stem on hand in your refrigerator or freezer to add to stocks and soups for a deep, earthy flavor.
