This time we have two recipes in celebration of Cinco de Mayo — first up, Carnitas — a super-easy celebratory twist on the traditional taco. Her version has “Tender but crispy pork, loaded with toppings.” Next, a sweet and creamy cinnamon Horchata traditional Mexican rice drink. Tortilla Know-How
Before using, you will want to soften your tortillas. You can do this by wrapping in foil and heating in the oven, or wrapping in a kitchen towel and heating in the microwave. But for the best flavor, toast directly over a gas flame until lightly charred on each side, then wrap in a clean kitchen towel to steam and soften.
